						theres an old rule of chemistry use no metels with acids and bases and use no plastics with solvents if SS "stainless steel" whether it be nichrome or strait chromium steel when it gets involved with acids "like in your cooking batch" the chromium in the ss will be leached out into solution and will rear its ugly green emultion head when you base and shake with np. if you use carbon steal .... theres no chromium nor nickle in it the iron and carbom may/will leach but i dont think they will create such a mess as does that damm changing color with ph changes ......chromium does!
