i'm looking for some info on different types of dielectric fluid
(for those that don't know, dielectric fluid is a fluid that doesn't conduct electricity)

Anthony's right, just make SURE its distilled water.

distilled water works, but it picks up salts to quickly and starts to conduct again
i need something that will remain non-conductive

You could use transformer oil to this is used in big high voltage transformers as cooling fluid .

altho, it all depends on how well the oil can be cooled

If you're looking at cooling, water has a very good specific heat capacity and is an excellent conductor of heat.
Oil isn't so good bu it does give corrosion protection at the same time.
