Title: Can large chrystal rocks be formed from 2C salts?

All 2C-X salts I've seen are fine powders. 

Could one take lets say some 2C-I and use re-x technique to form lovely large rocks ala DMT or meth?

Sure, provided that you find the right recrystallization solvent (you need to experiment with something the salt is rather soluble in, and will slowly evaporate, depositing crystals). You will probably need loads of patience for this task.
