. Can this procedure be used on plain-old benzene? I'm only interested because the products were mentioned to be monoiodinated; iodobenzene can be used in the synthesis of phenylcyclohexylamines, and that's why I care. If not on benzene, then what? Peace!

Yes, benzene should give mono-iodobenzene using that particular treatment.

Bromobenzene can be made in exactly the same fashion, with NaBr/Oxone.

That's sweet! That information won't be useful only to me, since many bees have trouble locating/purchasing pyridine. Also, I'm sure I've bitched before about how expensive it is to have liquid bromine shipped.
