Can anyhydrous Sodium Acetate be converted to the trihydrate by simply recrystallizing from H2O?

I'd guess that it would, but why do many synths require the trihydrate form if your just gonna add it to water anyway?

A commonly available form of sodium acetate is the trihydrate and so the trihydrate would often be specified not because it is required but just because it is the usual form. If you have anhydrous sodium acetate and are using it to make an aqueous solution then just make the adjustment for this.
